The Meal Doctor: Deluxe Pizza

Food that you love with a twist!

My name is Danielle, and I am pretty much allergic to everything.

Now that we have that out of the way, nice to meet you! I’m a medical student who is very passionate about a few things: family, science, food, and my felines. My life has BGD and AGD time periods: Before Gluten/Dairy and After Gluten/Dairy. In my entire time on this planet, I have never met someone who doesn’t love bread and cheese — I mean, who can live without such dietary staples? Apparently me. Trust me, this is not something I volunteered for, but I have survived thus far.

Now, I am here to help you make gluten- and dairy-free — dare I say, healthy — food that stands up to the scrutiny of the most avid gluten and dairy lovers among us! If you’re trying to find more healthy ways to make classically delicious food (or if you’re a walking ball of allergies, like me), stay tuned! You might not miss these foods quite as much as you think you would.

One of my favorite “BGD” foods was pizza. It always made me sick, but I ate it anyway because it was so delicious. The day the doctor told me not to eat gluten and dairy anymore was not a happy one for many reasons, but a big one was pizza. For months, I missed pizza — a food that tortured my poor GI tract but was so wonderfully tasty. One day, my husband suggested we make a pizza, and we both laughed at the idea. But then we thought about it some more, and one of our most beautiful recipes was born.

For all you “classic” pizza fans out there, hear me out. This recipe is not one you want to miss, whether you eat cheese and bread or not!

Ingredients:

  • Pizza:
    • Gluten-free pizza crust (most brands are very tasty)
    • ½ onion
    • 1 16-ounce bag of broccoli
    • 1 bell pepper
    • Canned chicken and grilled chicken
  • Sauce:
    • ½ cup mayonnaise
    • 2 tablespoons of taco seasoning
  • Seasoning
    • Salt and pepper to taste
    • Blackened seasoning
    • Fresh garlic

Fun Facts:

  • The sauce for this recipe can be used for enchiladas, taco salad, or fajitas. It works well because it has the same consistency as cheese without the dairy!
  • You can make this a breakfast pizza by using scrambled eggs, sausage, bacon, and sriracha instead. You can make this an Italian pizza with pesto, chicken, bacon, and vegetables.

Enjoy your pizza! Remember that no matter what meal it’s for, if you have a pizza with radius “z” and thickness “a”, its volume is Pi(z*z)a!
