New Business Update

Hot Box Cookies, a custom-made cookie delivery service, is opening its doors mid-September in downtown Columbia. The three 20-year-old owners, Adam Hendin, Corey Rimmel and David Melnick, will be juggling classes at the University of Missouri-Columbia and working at their late night cookie delivery business when the bars close. “We’ll have a store front, where people can eat cookies and drink shakes,” Hendin said. “We’ll also be doing cookie delivery from 1 to 3 a.m.” The incoming juniors will be baking the cookies and delivering them in pizza boxes, as well as making them to the customers’ specifications. “It’s going to be really labor intensive for the three of us in the beginning,” Hendin said. “We’re going to be using a pre-made dough and have toppings that we can quickly mix in.” Hot Box Cookies will be located in Downtown Columbia at 808B E. Broadway.
