Vietnamese restaurant opening
Saigon Bistro, a Vietnamese restaurant owned by veteran businesswoman Jenny Lam, is scheduled to open next week at 912 E. Broadway.
Lam owned four restaurants in Texas before coming to Columbia with her husband, MU Professor Henry Nguyen, and owned Glamour Nails and Alterations Unlimited in the Shoppes at Stadium before getting back into the restaurant business.
Saigon is authentic down to the decorations brought back from a trip to Vietnam and entrees such as com ga xoa xa ot (pan-fried chicken with lemongrass and steamed rice)and com tom kho to (shrimp sautéed with traditional sauce and cooked in a clay pot).
The prices of entrees range from $5 to $7.50, and the menu includes Vietnamese-style coffee and beer, along with $1 soft drinks.
Lam renovated the space that housed Kayotea Tea Room and Bistro for several years and Café 9 Nove, which lasted less than a year.
